Since 96 Winery Road first opened its doors in 1996, this culinary pulse in the heart of the Helderberg has given unassuming country-style dining a new lease of life with its hearty yet haute approach.
96 Winery Road is just one of the excellent local restaurants currently serving our wines. At present they have listed both our Chardonnay and Samara (Cabernet blend), but we asked the chefs to come up with a dish that would suit the Dombeya Chardonnay 2007 and we love their sense of taste!
Roasted Scallops
"Roasted scallops, wrapped in pancetta served on braised fennel bulb with a citrus glaze"
Ingredients:
2 oranges
1 lemon
half a cup of sugar
1 cup water
12 rashers pancetta
4 baby fennel bulbs
1 cup Dombeya Chardonnay
1 tbsp butter
Salt & pepper to taste
- poach the fennel bulbs in the wine and butter. Season to taste, put to one side
- peel the rind off the oranges and the lemon and julienne
- place the rind, sugar, water and the juice from the oranges and lemon in a pot and reduce to a thin marmalade consistency
- wrap each scallop in a rasher of pancetta and secure with a tooth pick
- heat a frying pan till very hot and sear the scallops quickly
- season and place in the oven and deglaze with the orange reduction
- take out the toothpicks and serve on the fennel bulb. Pour the remaining reduction over the top and serve.
